  9. 1/2 Tza. Aceite
  10. 1/2 cdta. Cremor Tártaro

Steps to make to make Chifón de Naranja

  1. Cernir seis veces la Harina con el Azúcar, el Polvo de Hornear y la Sal. Formar un Volcán y agregar en el centro las yemas, el Aceite, el Jugo y la ralladura de Naranja. Mezclar en forma circular hasta obtener una masa suave.
  2. Batir las claras hasta espumar. Añadir el Cremor Tártaro y batir hasta obtener el punto Nieve. Incorporar en forma envolvente las claras batidas a la Masa.
  3. Verter en un Molde(enmantequillado y enharinado) tipo Anillo de 30 centímetros de diámetro y llevar al Horno a 160 C durante 55 minutos. Luego aumentar la temperatura a 180 C y Hornear durante 10 minutos más.
  4. Retirar el Molde del Horno, voltear y dejarlo enfriar.
  5. Pasar un Cuchillo por los bordes del molde y desmoldar. Servir.
  6. Nota: El Cremor Tártaro es un Polvo blanco sin sabor específico, subproducto de la producción del Vino, cuando sucede la fermentación del Jugo de Uva, se sedimenta en los Barriles y se forman los Cristales, que al purificar se convierten en Polvo fino.
    En Repostería: Una de sus propiedades es estabilizar las claras cuando se baten a punto de nieve aumentando su volumen y tolerancia al calor. Lo podemos encontra en Supermercados o en Tiendas especializadas en productos de Repostería y Confitería.
  7. TIP: Yo le añadí Ajonjolí tostado encima.
