- Pelar la papas y las batatas, cortar las papas por la mitad y las batatas, depende del tamaño, en pedazos grandes. Poner alrededor del carré, salpimentar, rociar con un poco de aceite, el jugo de la naranja (si fuese necesario agregar medio vasito de agua) y espolvorear con orégano.

- Llevar a horno fuerte, depende de cada horno, yo lo puse a 200ºC, durante la cocción ir mojando el carré con el juguito. Dar la vuelta al carré para que se dore por los dos lados, también dar vuelta a las papas y las batatas y seguir cocinando por lo menos 40 a 45 minutos más.

- Cuando esté listo cortar en rodajas, servir dos por personas con algunas papas y batatas. Con el fondo de la cocción, las ciruelas y la panceta que nos habían sobrado hacemos la salsa pasándolas por la batidora. Si quieren que les quede una salsa fina, pasarlas por un cedazo o chino. Y a disfrutar!!
